Ultimate Chicken Burger
A Crunchy burger that melts in your mouth
1 Boneless Chicken Breast
2 Cups of Cornflakes, Crushed (any brand)
1 Cup of white flour
3 eggs
2 Strips of rind-less bacon
1 avocado, pitted and mashed
Mayonnaise
Sweet chili sauce
(optional)
Cheese
Tomato, sliced into 6 pieces
3 washed lettuce leafs
Oil for shallow frying
Hamburger buns

 

Take 3 containers. Place the flour, egg and cornflakes into separate containers each.

Fillet your chicken breasts so that the chicken is cut horizontally into slices roughly the same size then trim off the fat if there is any.

Take out a frying pan big enough to fit all 3 fillets into it. Place enough oil into the pan so its half full. Or enough to just reach the top of the chicken fillets.

Take your chicken and firstly coat it in flour, then egg, then finally the cornflakes. Place in the pan and cook until you see the edges of the chicken start to brown then turn them over.

Cut the bacon into half horizontally then into 3 strips vertically. In an ovenproof dish place the bacon in it and cook in the oven for 10 minutes at 400 degrees F.


While the chicken is cooking, toast your burger buns lightly and then prepare the toppings for the burgers.

When the burger buns are are ready, take them out and place a slice of cheese on the bottom bun followed by 1 teaspoon of the Sweet Chili Sauce. Take the chicken out and place on the burger. Place 1 more cheese slice on top of each chicken fillet.

Liberally coat the top buns in mayonnaise add 2 slices of tomato and the lettuce leaves then set aside.

Take the bacon out of the oven and place 4 pieces per burger. Take the avocado if you choose to add it, and place 3 tablespoons per burger.

Finally place the top buns on the burgers and serve.

Makes 3 Burgers.
