1 large chicken (cleaned) 8-10 small red potatoes 1 onion, (peeled, sliced) 6-8 carrots (cut into 1 inch lengths) 6 stalks celery (cut into 1 inch pieces) 3-4 radishes (sliced) 1 bag frozen mixed vegetables (green beans and corn work well) 1-2 cups water 1 Tbls. marjoram 1 Tbls. thyme 1 Tbls. savory 1 Tbls. pepper 1 Tbls. cumin 4 bay leaves

Preheat oven to 350 degrees. In a deep oven pan (roasting pan), place a bottom rack in the pan. Place the chicken in the pan. Surround the chicken with all the vegetables (except frozen vegetables). Place frozen veggies INSIDE chicken and sprinkle combined seasonings on top of chicken. Add water to the pan, cover and cook for 45 min. Remove from the oven and enjoy!
