Apple Salad in Boats Waldorf Salad |

1 Medium fresh pineapple 2 cups diced red skinned apples 1/2 cup diced celery 1/2 cup raisins 1/2 cup chopped walnuts 1 Tbls. lemon juice 1 cup non dairy whipped topping 1/2 cup mayonnaise 1/4 tsp. ground orange peel - optional

Cut pineapple lengthwise into 6 wedges.
Remove meat, leaving 1/2 inch thick shells.
Dice 2 cups into large bowl.
Add apples, celery, walnuts, raisins and lemon juice.
Toss to mix well.
Blend whipped topping and mayo in a small bowl.
Stir into fruit and nut mixture. Chill.
Arrange pineapple boats on lettuce leaves. Fill with salad. Garnish with any remaining pineapple and mint leaves, if desired.
Note: This is a nice party and company dish, however you may make this using canned pineapple (omitting juice) as an easy salad side dish for your usual family dinnertime.
