Blood Orange Viniagrette A Tangy, Sweet Salad Dressing |

Juice of 1 blood orange 1-2 Tbls. balsamic vinegar 1/4 tsp. salt 1/2 tsp. pepper 1 green onion 2 Tbls. plain yogurt 2 Tbls. fresh grated parmesan

This is a dressing I just came up with because I always wanted to try blood oranges. If you've never seen them, they can be found in most gourmet grocery stores. They have a ruby red flesh, and a lovely taste that resembles mandarin orange with a hint of raspberry. I like balsamic vinegar with the flavor of the juice, but you should feel free to experiment. Wine vinegar and raspberry vinegar also go nicely with the flavor of the orange. Taste frequently as you add your vinegar-too much can really overwhelm the lovely taste of the juice. Add all the other ingredients, except the parmesan, and mix well. I say hold the cheese because, even though I thought it tasted great, my husband said it really didn't add anything, so you might take a teaspoon of the dressing and a pinch of the cheese to see if you like the combination. I prefer to just put everything in a lidded tupperware and shake it like crazy to mix it, but you do whatever works for you. A quick spin in the blender will also work. This dressing is lovely over mixed greens and herbs.
