Brown Rice Fiesta Salad

2 cups brown rice, cooked 1 can chick peas 4 tomatoes diced 2 cucumbers peeled, diced 4oz. fetta cheese, cubed or crumbled 1 cup pine nuts 1 handful of fresh copped mint or basil 1 handful of fresh chopped spinach (optional)
DRESSING: 4 Tbls. olive oil 2 Tbls. lemon juice 2 cloves crushed garlic salt and pepper, to taste

Simply mix all salad ingredients.
Then mix all dressing ingredients and pour onto salad 30 minutes before serving.
Serve and enjoy!
