Craig's Best Dang Som Tam Recipe in Canada Green Papaya Salad |

All Measurements are approximations:
4 Thai chillies peppers, cut up a bit 4 cloves garlic, peeled and cut up slightly 1 Tbls. small dried shrimp (optional) 1 cup coarsely shredded unripened papaya 1 cup coarsely shredded carrots 1/2 cup coarsely cut long beans Juice of 2 or so limes, to taste 2 Tbls. fish sauce, to taste 2 Tbls palm sugar or brown sugar, 1 small tomato, cut into bite-size wedges; or a handful of cherry tomatoes, halved 1/4 cup chopped unsalted peanuts

Using a mortar and pestle, mash the garlic, peppers and shrimp together;
add the beans, papaya and carrots and slightly mash just to mix
(in a small bowl, make the dressing by combining the lime juice, fish sauce and sugar --
add this dressing to the papaya mix --
combine by tossing or mashing ever so slightly --
toss in the tomatoes and peanuts.
Let sit for a few minutes and serve.
