Creamy Potato Salad One of the Best!!! |

1/4 cup vinegar 1/4 cup water 1/4 cup sugar 1/4 tsp. salt dash of pepper 1 tsp. prepared mustard 2 eggs, well-beaten 1 cup Miracle Whip Salad Dressing 4 cups potato (cooked, cubed) 3 hard-boiled eggs (cut up)

Combine the vinegar, water, sugar, salt, pepper, and mustard in a kettle. Bring to a boil. Reduce the heat and gradually add eggs. Cook, STIRRING constantly, until slightly thickened (about 5 minutes). Beat in the salad dressing and pour over the hard-boiled eggs and potatoes. Refrigerate! A little diced onion also gives this recipe extra flavor!
