Cucumber Salad
Creamy and Cool!
Cucumbers-peeled
sour cream
white pepper

 

The tricks with this recipe are first, to slice the cucumbers as THINLY as possible, and secondly, to dry them as much as possible to avoid a watery salad.

One of those electric salad slicers are good for thinly slicing the cucumbers. It's alot faster than doing it by hand!

Once you have the desired amount of cucumber slices, place on layers of paper towels, and cover with the same, and apply pressure so the excess water is absorbed. You will want to repeat this process several times, until you think they are fairly dry. After that, put them once again in the paper towels and let them sit and absorb further water. The drier they get, the better your results will be.

Take the dry cucumber slices and mix with a bit of sour cream- don't blob it on, add a little at a time until you are happy with the consistency. Too much sour cream is overwhelming and ruins it.

Sprinkle small amount of white pepper on, taste, and add more if desired.
