Greek Salad
A Classic Greek Salad
2 Tbls. extra virgin olive oil
1 Tbls. lemon juice
1/2 clove garlic - minced (crushed)
1/4 tsp. sea salt
Pinch freshly ground black pepper
8 leaves romaine (Cos) lettuce
2 tomatoes - cut into wedges
1/4 small red onion - thinly sliced
8 thin cucumber slices - cut in half
1/4 green pepper (capsicum) - deseeded and finely diced
2 oz (60g) feta cheese - cut into small cubes
12 kalamata olives
MIX together the olive oil, lemon juice, garlic, salt and pepper in a small bowl.
Place the salad ingredients in a large bowl.
Pour the dressing over the salad and toss gently to combine just before serving.
