Karl's Low Country Potato Salad Increidable Hot Potato Salad |

5 lbs. Red Skin Potatoes 1 Dozen Large Hard Boiled Eggs 1 lb. Bacon Diced 1 inch pieces Fried 1/2 Cup Fresh Chives 1/4 Cup Spring Onions, Chopped 1 Cup Dukes Mayo 1/4 lb. Sweet Cream Butter (1 stick) 8 Tbls. Minced Garlic 1 Tbls. Oregano 1 Tbls. Black Pepper Salt to Taste

Cut the red potatoes into 1/2 inch pieces and leaving the skins on rinse. Place the potatoes into a large casserole dish and add the butter (cut up), the garlic, the chives, and black pepper, and oregano. Place into a preheated oven @ 375 degress F. for about 45 mins. Be sure to stir about every 15 mins.
When potatos are done remove from oven. Add bacon, spring onion, salt, pepper, and mayo. Fold together until combined. Fold in egg and serve.
Great hot or cold.
