Mexican Shrimp Salad Alone or With Pasta! |

Shrimp, cooked, peeled, and deveined Fresh Tomatoes, diced Avocados, diced Sweet Onion, diced Jalapeno Pepper, diced Celery, diced Cilantro, chopped Green olive with pimento, halved
ALL THESE INGREDIENTS CAN BE MIXED TO YOUR OWN DESIRED RATIO FOR THE DRESSING: olive oil, lemon juice, jalapeno juice, parsley, oregano.

Place all ingredients, minus the dressing, in a large bowl. Separately mix dressing ingredients and blend well. Toss the dressing with shrimp mixture. If the addition of pasta is desired, cook pasta according to the pkg. directions, cool, then toss with shrimp mixture. GREAT served with Sissy's Sourdough Bread (see bread recipes), a bottle of good wine, and a fresh Strawberry Pie.
