Quinoa Tuna Salad delicious and nutritious |

1/2 cup dry quinoa (1 cup cooked) 1 can tuna in water (drained) 1 whole avocado 6 sweet cocktail tomatoes 1/4 cup cilantro 2 tbsp olive oil 2 tbsp balsamic vinegar 1/2 a lime - juiced salt and pepper to taste

Cook quinoa (as directed on package) and set aside to cool. quarter tomatoes and cut avocado into chunks. Add tuna, quinoa, tomatoes and avocado in bowl and mix. Add remaining ingredients and mix well. Served best at room temp. but can be chilled.
