Raspberry Vinaigrette Delicious Dressing! |

1 1/2 cups fresh raspberries 2 Tbls. raspberry vinegar or 2 Tbls. sherry vinegar 2 Tbls. fresh lemon juice 1 tsp. shallots, minced 1/8 tsp. dry mustard 1/2 cup virgin olive oil salt and freshly ground black pepper

Puree the raspberries and then strain to remove the seeds. Return the raspberries to the food processor and add the rest of the ingredients (vinegar, lemon juice, oil, shallots, mustard) and blend. Add salt and pepper to taste.
This is great over garden greens with bacon and toasted walnuts or on a fresh fruit salad or try marinating chicken breasts in it!
