INGREDIENTS . 2/3 cup chopped cooked chicken breast . 1 medium green onion, chopped (about 2 tablespoons) . 4 dried apricots, finely chopped . 3 tablespoons apricot preserves . 2 tablespoons nonfat mayonnaise . 2 teaspoons chopped fresh parsley (optional) . 2 slices Pepperidge FarmĀ® Whole Grain 100% Natural German Dark Wheat Bread . 2 lettuce leaves

INSTRUCTIONS Stir the chicken, green onion, apricots, preserves, mayonnaise and parsley, if desired in a medium bowl.
Divide the lettuce and the chicken mixture evenly between the bread slices.
