Avocado and Bacon Sandwich Deliciously Different! |

1 ripe avocado 1 tsp. lemon or lime juice 1 Tbls. minced onion 1/4 tsp. garlic powder 1 Tbls. Olive Oil 4 slices bacon 2 slices boiled ham or Roast Beef 4 or so Spinach Leaves 4 slices lite or grain bread 1 Tbls. butter, melted

Peel and cube avocado slices and set aside.
In a small bowl, mix the lemon or lime juice, minced onion, garlic powder and olive oil. Add avocado and mix into a paste.
In a small skillet, fry the bacon until crisp. Turn out onto paper towels to drain well. Next butter the chosen bread slices and oven toast. (Option: Mix garlic powder into the butter for garlic toast, if desired). Spread avocado paste mix onto the bread slices, add spinach leaves, two slices bacon broken in half and a slice of ham or beef to each sandwich. Add salt and pepper to taste.
This makes two really man-sized sandwiches or place a half sandwich on a plate with french fries or chips to serve four!
