4 cups sharp grated cheddar cheese (it tastes much much better if you grate it yourself, storebought pre-grated doesn't have the same flavor point!) 1 1/2 cups Hellmans Mayonnaise 1/2 teaspoon hot sauce 1/2 cup chopped leeks (white parts only) 1 1/2 cups chopped roasted peppers Pepper and salt to taste

Mix all thoroughly, place in container and chill for at least 4 hours. Honestly it's better if you wait until the next day, all of those flavors will marry overnight.
