Meatball Sandwiches Hearty Crowd Pleaser |
1 Bag frozen meatballs (Regular or Italian flavor, NOT BBQ or sweet and sour) 1 Lg. Can or Jar Spaghetti Sauce, any flavor you like 2 Pkgs. Soft white rolls. (Stadium rolls or any that are like Subway white bread) 2 cups Grated Cheddar or Colby Jack 8 Dill Pickles (the more sour the better), diced 6 Roma tomatoes, diced 1 small onion, diced *Optional: we always doctor our sauce with 1 pkg. spaghetti seasoning mix and additional garlic powder
Crockpot: Place meatballs, spaghetti sauce and seasonings, if applicable, in pot and cook on low for 6 hours Stove top: Place meatballs, sauce and seasonings, if applicable, in pan and set to medium heat. Stir occasionally until heated through, approx. 30 mins.
Dice onion, tomatoes and pickles and grate cheese while waiting on meatballs. Take cooked meatballs and place 3-5 on each bun (I cut meatballs in half for little ones, it makes them easier to eat), top with handful of cheese, then tomato, pickle and onion. Before you add tomato, onion and pickle, sandwiches may be placed in microwave for 20-30 seconds to melt cheese. My Aunt Phyllis made these for us usually in the Spring and Summer. She served them with potato chips and ice cold Orange Crush.
I know the pickles sound odd, but try it, it sets the whole thing off. If you can find sour pickles where you live, that's what she used. If not, I have found that Vlasic dills are a great substitute.
