Tuna Sandwich Cajun-Style Good Cajun Eats! |

16 oz. Tuna (packed in water) 16 oz. lump crabmeat 2 cups mayonaise 1 cup chopped onions 4 garlic cloves 2 Tbls. prepared horseradish 2 Tbls. brown sugar 2 oz. orange juice 2 oz. Louisiana Hot Sauce 2 Tbls. cayenne pepper ketchup grape jam 1 tsp. salt 3 large po' boy rolls (french or sub rolls are ok)

Crush, peel and chop garlic.
In a large mixing bowl combine all the ingredients except ketchup and jam, and mix well. Let stand in refrigerator for 15 minutes. Toss well.
Horizontally slice rolls, scoop out most of the bread, leaving a nice cavity. Fill bottoms with generous amounts of tuna mixture, top with ketchup and dollops of grape jam.
Carefully place tops on the sandwiches, and press down firmly. Place them on aluminum tray and heat at 450 degrees F. for 10 minutes.
Serve at once.
Slice sandwiches in half to feed six ordinary people, or leave whole to feed 3 very hungry Cajuns!
Serve with cold beer or ice tea.
