AMLA ( Indian Gooseberry) PICKLE
Spicy Gooseberry Pickle
Amla is greenish-yellow fruit of the size of a lemon and known to have medicinal values. It contains rich amount of ascorbic acid and polyphenols like favonoids, allagic acid and gallic acid. Involved in the treatment of rhumatic arthritis and osteophorosis. Also has culinary uses besides usage in the preparation of some shampoos.

Amla : 20 nos
Tamarind pulp : 2 Spoons
Mustard Seeds : 1 Spoon
Mustard Powder : 1 Cup
Turmeric powder: 1 Spoon
Salt : 3-4 Spoons
Asafoetida : 1/2 Spoon
Sesame oil : 350 ml
Red Chillies : 4 nos
Fenugreek Powder : 1/2 Spoon
Tamarind pulp : 2 Table Spoons
Red Chilly Powder : 2 Table Spoons
Garlic bulbs : 1/2 cup


 

1. Fry Amla fruits slightly, cut in to pieces and remove the seeds.

2. Add red chilly powder, turmeric powder, salt and mustard powder to the amla pieces and mix well.

3. Cook the tamarind pulp and add to the amla mixture.

4. Take frying pan, add 2 spoons of oil and splutter the mustard seeds first. Add Asafoetida and red chillies and fry. Add these to the amla mixture.

5. Roughly pound the garlic bulbs and add to the above. Also add the fenugreek powder.

6. Now add the oil and mix well.

Allow to settle in a dry bottle for a couple of days before use.
