Best Italian Meat Sauce in the World Pasta Sauce |

1/4 cup of olive oil 6 Italian sweet sausage links (remove casing and use ground meat from sausage) 8 basil leaves 4 cloves of garlic 1 tbsp of chopped oregano 1 tbsp of chopped parsley 1/2 tbsp kosher salt 1/2 tbsp ground pepper 1/2 tsp red pepper flakes 8 vine tomatoes (mill/chop the tomatoes and save the pulp and juice) 1 6oz can of tomato paste 1 tbsp of sausage seasoning (paprika, dill, garlic and onion powders) 1/2 chopped red onion 1 stalk of celery (chop into 4 or 5 big pieces) 1 chopped carrot (chop into 4 or 5 big pieces) 6 tbsp butter 1/4 cup of grated locatelli/pecorino cheese 1/4 cup of any dry red wine (Chianti is preferred) 1 tbsp sugar 4 ounces of goat cheese

1. Heat the olive oil in a 8 to 10 qt sauce pan over med high heat. 2. Add sausage meat, red onion, garlic cloves, celery and carrots. Stir and cook until meat is brown for about 5 min. 3. Add red wine and cook off/reduce half of the red wine 4. Add butter and cook until melted / do not burn the butter! 5. Add all remaining ingredients except for locatelli cheese and parsley and turn until mixed well. 6. Simmer lowest heat setting on your stove for 90 minutes turning every 30 minutes. 7. Fish out carrots and celery with tongs. 8. Add locatelli cheese and parsley at the end. 9. Stir al'dente pasta into the sauce for the final two minutes of cooking the pasta.
