I CAN'T BELIEVE IT'S LIGHT ALFREDO SAUCE
Light Alfredo Sauce
1 stick of butter or 1/2 stick & 1/4 cup olive oil is a lower fat option.
1 large sweet yellow onion , finely chopped
1 cup low fat or skim milk or chicken broth
1/2 cup white wine
1 cup parmesan cheese
1 lb of protein of your choice... Chicken, Turkey, Shrimp, Langostino, etc.cut into 2 inch chunks.


 

Heat butter or butter/olive oil (your choice as to how much fat you want in your recipe) in a large frying pan over medium heat.

Add onions and saute until clear and really soft. ( Do not let brown or your sauce will be brown) Slow and easy does it.

Remove onions from heat and pour into a food processor or blender and puree until very smooth and return mixture to pan over medium heat, adding milk or chicken broth. Increase heat and cook until bubbling and add wine, return to boiling and add cheese, cooking until mixture thickens. If it needs more thickening, add some rice flour, or cornstarch thinned with cold water in a cup, then slowly add to the mixture, stirring constantly.

Add cooked meat to the mixture and serve over the pasta of your choice.
