Jerk Marinade

1 cup fresh thyme 1/3 cup of scallions 1/3 cup yellow onion 1/4 cup of bermudia onion (Red) 1 tbsp ground allspice 1/4 tsp ground nutmeg 2 cup of beer (Budwieser etc.) 1 cup of soy sauce 1 tsp scotch bonnet pepper or to flavor of hottness 3 garlic cloves

Chop fine or blend together everything with soy sauce then slowly add beer to cut out the saltiness of the soy sauce, and make sure marinade is thick. You can infuse BBQ sauce to make BBQ Jerk Sauce. Good for Pork, Chicken , and Tuna
