Sarah's Smelly Chutney
Tangy Fruit Salsa for Pork!
1 red apple, diced
1 cup currants
1 cup chopped walnuts
1 small yellow onion, diced
1 med. carrot, peeled and diced
1/2 cup cider vinegar
1 tsp. sweet basil
1/2 tsp. ground ginger
1/4 tsp. paprika

 

Before cooking, sterilize a jar and lid, large enough to hold 5 cups of liquid, by totally submerging in boiling water for 10 minutes. Leave the jar in the hot water while you're preparing the chutney. You want the jar to be hot when the chutney is poured in, or the glass may shatter.
Put all ingredients in a large saucepan and simmer on medium heat for about 15 minutes. Pour chutney into sterilized jar and refrigerate until ready to serve. Goes wonderfully with roast pork.

Preparation Time: Approx. 20 min. Serves: 4 cups
