Tequila Lime Marinade
1/2 cup Tequila. I use Jose Cuervo Gold Tequila. White tequila will not work for this recipe.
1/3 cup lime juice.
1/4 cup olive oil.
Zest from 2 limes.
1 tsp. sea salt.
1/4 tsp black pepper
|
Mix all ingredients together in a large one gallon zip lock plastic bag.
Add your fish fillets. (Any firm whitefish will work. Bass, Grouper, etc.)
Leave fish in marinade for 1 hour turning frequently.
Remove fillets from bag and place directly on a very hot grill. Cook 3 minutes per side or until opaque. Do not overcook or the fish will dry out.
Enjoy.
