Tomato Chutney

2 lbs. green or firm red tomatoes 2 1/2 lbs. onions 2 lbs. cooking apples 1 lb. sultanas or raisins 6 cloves garlic 2 pints white wine vinegar 2 tsp. salt 2 Tbls. ground ginger 2 Tbls. mustard seed 1-2 Tbls. cayenne pepper

Blend or mince tomatoes, apples, onions, garlic and dried fruit until finly chopped. Put all in a preserving pan or large sauce pan.
Add all other ingredients and bring to the boil. Simmer for 2 1/2 - 3 hours until it has thickened.
Heat jars and fill.
This is lovely with cold or hot meats and cheese. I have used this over the year and it keeps well.
