Anns Mock Crab Cakes
A Delightful Mock Crab Cake |

3 or 4 zucchini
2 lg. onions
4 green peppers
2 tsp. salt
pepper to taste
1 tsp. garlic salt
pinch of parsley flakes
6 cups bread crumbs
4 eggs
4 cans (6 1/2oz. ea.) tuna in water
corn flake crumbs

Grind zucchini, onions, and green peppers. Let stand overnight and drain. Add remaining ingredients, except corn flakes crumbs. Mix well. Shape into small patties. Roll in cornflake crumbs. Place on baking sheet and fast freeze. Pack in plastic bags. Cook until lightly browned in hot deep fat or place frozen patties in a 400 degree oven until lightly browned.
