Banana Mandrin Salmon with Jalepeno Asparagus
Salmon Recipe
2 4oz Salmon Filets
1 banana
1 4oz can Dole Mandarin Oranges
1 Small Jalepeno
1 bundle of Asparagus
1 stick of butter
1/4 cup brown sugar
3 tbsp Olive oil

 

Rinse off salmon filets under tap water set on plate and lightly salt and pepper.
In a skillet melt 1 stick of butter under high heat, when butter is melted add in brown sugar. You need to watch this and stir it about every 15 sec until it starts to bubble or carmalize.

Turn heat to medium and add in banana slices and mandarin oranges. Cook until they have a nice glaze on them and add in Salmon. Cook on each side until salmon is carmalized about 3min each side. Take salmon out of skillet set on plate and pour remaining fruit and mandarin oranges over salmon.

Jalepeno Asparagus

Take seeds out of Jalepeno and saute in 3 tbsp. vegetable oil about 10-15 seeds, you want the oil from the seeds to spice the oil, add in Asparagus. Lightly Salt and pepper and saute Asparagus till done, usually about 6 min. Save the rest of the Jalepeno for another recipe.

This makes a really nice sweet and lightly spicy seafood recipe that doesn't taste fishy at all.
