Breaded Baked Orange Roughy

1/3 cup plain non-fat yogurt 2 lbs. orange roughy 2 Tbls. parmesian cheese 1 clove garlic 1 tsp. lemon juice 4 slices oat-bran bread (dried and shredded to crumbs) 2 tsp. Pam Cooking Oil Spray
|
Preheat the oven to 400 degrees F. Combine yogurt, garlic, and lemon juice. Coat all sides of the fish and marinate 1 to 3 hours in the refrigerator. Combine bread crumbs, parmesian cheese, and Pam cooking spray. Spread bread crumb mixture on a large platter. Dip fish into the mixture, coating both sides. Place fish on a Pam-sprayed broiler pan and bake for 10 minutes. Then place fish 4-5 inches from the heating element in the broiler and broil for 2-3 minutes. Turn and broil 1-2 minutes more.
