Breaded Prawn & Mushroom Starter |

Up to 36 Medium Open Mushrooms 1/2 lb. Prawn Butter Freshly Made Breadcrumbs Egg and Seasoned Flour For Coating
|
Method: Wash and peel the mushrooms taking care to remove all of the stalk.
Portion the prawn butter into rough 1/4 oz. portions and roll then press into the mushroom hollow.
Allow to chill then pass through the seasoned flour and then the beaten egg, followed with passing them through the fresh breadcrumbs. Complete this stage twice to ensure a good coating.
Deep fry and allow to drain thoroughly.
TO SERVE: Serve on a bed of finely shredded iceberg or flat leave lettuce. Garnish with fine tomato and cucumber wedges with a twist of lemon.
Place a generous dollop of garlic and chive mayonnaise on the side.
