1 lb. Catfish fillets 1 16oz. can stewed tomatoes 1 medium onion, chopped 1 clove garlic, minced 2 tablespoons olive oil 2 tablespoons green chilies 1 tablespoon capers 1 tablespoon lemon juice 1 bay leaf 1/4 tsp. oregano 1/4 tsp. salt 1/4 tsp. pepper

In a cast iron skillet, heat the olive oil. Saute onion and garlic until clear. Add tomatoes and herbs. Bring to a simmer for 10 minutes uncovered. Stir in remaining ingredients and place catfish over the top. Simmer for 7 1/2 minutes on each side. Serve on a platter with mixture spooned over catfish!
