Coconut Shrimp Delicious Coconut Crusted Honey Shrimp |

1 lb. medium shrimp 1 quart vegetable oil 1 (12 oz) bottle plain seltzer water 1 cup plus 3 Tbls. flour or whole wheat pastry flour 1-1/2 cups shredded coconut
Honey Mustard Sauce for dipping: 1/3 cup sour cream 1/3 cup Dijon style mustard 1/3 cup honey 3/4 tsp. ground cayenne pepper 1/4 tsp. salt

Heat oil in 2 quart deep saucepan over medium high heat of approximately 350 degrees F.
Pour seltzer in medium bowl. Beat in 1 cup flour by 1/4 cup at a time using a wire whisk.
In shallow dish add 2 Tbls. flour.
In another dish add coconut.
Take 5 shrimp at a time and lightly dust each with flour and coat with batter. Then roll shrimp in coconut.
Fry shrimp in hot oil approximately 2 minutes until golden. Drain on paper towels. Serve with Honey Mustard Sauce.
Honey Mustard Sauce: In bowl add sour cream, mustard, honey, cayenne pepper and salt. Stir together until mixed well.
