Crab Meat Au Gratin Very Cheese Saucy Seafood Casserole, Creole-Style |

What you need: 1 cup onions, chopped 1 cup celery, chopped 1/2 cup bell pepper, chopped 1 Tbls. pimentoes, chopped 1/2 lb. butter 4 Tbls. flour 2 lbs. Lump Crab meat 4 cups hot Half n' Half cream 1 cup American cheese, grated Salt to taste Cayenne for heat n' taste 1/2 cup rhine wine, or whatever white wine you got

What you do:
Find you a heavy cast iron pot, put them over a medium fire, melt them butter. Saute' all them seasonings until softened, 'bout 5 minutes. Add them flour and mix'em up, really good. Now add them hot cream, reduce until them mixture thickens, then add them wine. Salt and pepper to your taste. Place them crab meat in a casserole dish, top with them sauce, sprinkle on them cheese and bake in a preheated oven (375 degrees F.) until bubbly.
Let stand 20 minutes before you destroy your diet for life!
