Donvieve's Fish A Flavorful, Fresh Recipe for Firm White Fish |

2 lbs. snapper, ling-cod or cod 2 bunches green onions cheap white wine 1 can black olives, sliced 1/2 lb. fresh mushrooms 1/3 lb. baby shrimp, peeled and steamed,purchased this way at the store 1/2 cup olive oil soy sauce sesame oil Good chardonnay

Buy fresh fish on the day you plan to cook it. Be sure it came in that day.
Chop onions, slice olives in half, slice mushrooms in 1/3's or 1/4'ths
Poach fish in mixture of 1/2 white wine and water for 7-8 minutes until barely done.
Let fish stand to drain, pour off liquid.
Put fish on serving dish. Cover alternately with onions, shrimp, mushrooms, olives, onions, shrimp, etc.
Heat olive oil until it just starts to smoke (do nothing else while you do this, you want to catch it at just the right time). Sprinkle the olive oil over the veggies and fish, searing the veggies.
Sprinkle soy sauce over the top.
Sprinkle a few drops of sesame oil over the top.
Serve with cold chardonnay and garlic-brown rice!
