Fish Au Gratin

3 pounds white fish fillets 1/2 cup chicken broth 1 Tbls. butter 3 Tbls. flour 1/2 tsp. dry mustard dash of nutmeg dash of Old Bay seasoning 1 1/4 cups evaporated milk 1 1/2 tsp. lemon juice 1 1/4 cups American cheese, shredded

Rinse fish and set aside. Over high heat in a non-stick skillet, combine the broth and butter. Next add flour, mustard, nutmeg and Old Bay seasoning. Stir until blended. Gradually add milk; stir constantly until sauce thickens. Add lemon juice and cheese, and then stir in cheese until melted. Place fish in a slow cooker. Pour sauce over fish, cover and cook on medium high for 2 hours or until fish flakes. Serve hot.
