Fish Baked with Vegetables An Instant Meal! |

1 1/2 - 2lbs fish fillets 1/4 lb. salt pork, cut into small cubes or diced bacon (optional) 1 onion, diced 3/4 cup fresh mushrooms 1/4 cup diced red or green pepper 2-3 medium carrots, sliced thin 1/2 cup sliced celery 1 tsp. dill weed 2 Tbls. frsh chopped parsley 1 lemon, sliced 1/8 tsp. pepper 1 cup dry Sherry or white wine

In a skillet or frying pan, fry the salt pork until crisp and golden. Add the onion, mushrooms, green pepper, carrots, celery, dill weed, and parsley. Cook until tender. In a buttered baking dish, add the cooked vegetables and place the fish fillets on top. Top with the lemon slices and pour the wine over them. Cover and bake in a 400 degree F. oven for about 10 minutes. Remove the cover, baste and continue to cook about 10 minutes or until the fish flakes apart easily. Serve with mashed potatoes or rice, a loaf of French bread, and a green salad! This instant meal can be made ahead and held in the refrigerator until its ready to cook. In this case add ten minutes to the cooking time, but lessen cooking time if your fillets are less than one inch thick!
