Grilled Salmon Great salmon without the fishy taste |
3 pounds fresh or frozen salmon fillets, skin on (you can use salmon steaks too) 6 Tbls. butter, melted 2 tsp. dried basil (or 2 Tbls. fresh) 1 Tbls. fresh or dried parsley 2 Tbls. lemon juice 1 Large Onion, sliced 1/4 inch thick and separated into rings Bacon
Thaw fish if frozen (best way is to thaw in refrigerator). Cut the fish into serving-size pieces, leaving skin on.
Mix together butter, herbs and lemon juice. Brush fish with butter mixture. Let sit 10 minutes. Heat grill (low heat).
Place fish on grill, skin side down. Put onions rings on fish, and place a piece of bacon on top of onion rings. Hit salmon with another shot of butter mixture, where-ever you can.
Grill 30-40 minutes, depending upon thickness of salmon (its done when it flakes easily). Brush with butter mixture twice or so during grilling.
The bacon fat and onion juice drip into the salmon and make it really tasty!!
