Grilled Shrimp with Lemon and Chive Sauce

24 Raw jumbo shrimp 2 Tbsp. olive oil
Lemon chive sauce: 2 Tbsp. lemon juice 2 Tbsp. water 1 Tbsp. minced garlic 1/2 cup cold butter 1/2 tsp. finely chopped chives

Shell and de-vein shrimp leaving tails intact. Place the shrimp in a shallow pan and pour the 2 Tbsp. olive oil over them and let stand for 15 minutes or so. Meanwhile, in a small sauce pan combine lemon juice, water & garlic. Cut butter into little pieces. Bring liquid to a boil and gradually add the butter and stir the mixture until all the butter is melted. Remove from heat and when ready to serve add chives. Place shrimp on a hot grill and cook 3 minutes per side turning only once. Place shrimp on a platter and pour the lemon chive sauce over them. Serve with rice. Enjoy!
