Marys Fried Oysters

1 pint shucked oysters 1 large egg 1 cup dry cracker crumbs Salt and pepper, to taste Oil for pan-frying
|
Drain oysters and remove any remaining shell pieces. In separate bowls place each, cracker crumbs and egg (beaten with a little water). In heavy skillet heat 1/4 inch oil until hot, but not smoking. Individually, coat oysters with egg mixture, then crackers crumbs, repeat twice. Cook on medium high until golden brown on all sides of the oyster. Place on absorbent paper towels to drain. Serve alone or with cocktail sauce.
