Microwave Shrimp Tacos Great quick lunch for seafood lovers |

12-14 Medium Frozen Cooked Shrimp (Thawed and Peeled) 2 small flour tortillas 2 slices of swiss, american or cheddar cheese Sour cream Salsa (Pico de Gallo) slices of fresh Avocado Cajun Spice

Place 1 tortilla shell on microwave safe plate. Split 1 slice of cheese in half and lay both halves across center of tortilla shell. Do the same for another torilla shell on another microwave safe plate.
Place 12-14 thawed shrimp in microwave safe glass bowl, cover and heat on high for 75 seconds. Drain water from bowl and then toss shrimp with cajun spice.
Lay 6-7 shrimp over cheese on each tortilla shell. Cover with a small paper plate (or paper towel) and microwave each plate (separately) on high for 35 seconds.
With the back of a spoon spread some sour cream on one side of tortilla shell. Top with salsa and some slices of Avocado. Fold (or roll) tortilla. Enjoy!
This works great with left over fish fillets too.
