2 Tbsp butter 2 garlic cloves, peeled and chopped 2 lbs. red snapper fillets (or firm white fish) 1 cup Cilantro-Lime Sauce (recipe follows) 1 Sweet Maui (Walla-Walla or Vidalia) onion Cilantro sprigs 1 lemon and 1 lime, sliced lenghtwise

Melt butter in skillet, preferably cast iron, and add garlic and fish. Saute until fish flakes when tested with a fork. Do not overcook. Place fish on warmed serving platter. Pour Cilantro-Lime Sauce over fish, or serve sauce in separate bowl. Garnish with onion slices, cilantro sprigs and lemon and lime slices.
CILANTRO-LIME SAUCE 1/4 lb (1 stick)butter 1 cup chopped Sweet Maui (Walla-Walla or Vidalia) onion 3 Tbsp fresh lime juice 1/4 white Wine Worcestershire Sauce Dash of Tabasco or Chili Pepper Water 2 Tbsp chopped fresh cilantro Melt butter, add all ingredients, simmer for a few minutes over medium-high heat. Remove to a blender or food processor and process until smooth. Serve hot.
