Salmon Patties
2 cans boneless, skinless salmon
1 sleeve saltine crackers (crushed)
1 large egg
1 small onion (finely chopped)
1 tablespoon yellow mustard
Lawry's seasoning
Pepper
Oil for frying

 

Open both cans and drain excess water off salmon. In a large bowl, thoroughly mix salmon, egg, crushed saltines (may not need the whole sleeve), onion, mustard, Lawry's and pepper with a fork until thick enough to form patties. If too wet, add more saltines a little at a time. Make 4 patties and fry in hot oil in a skillet until brown on both sides. Very good with shells and cheese and peas! Mmmm!
