Shrimp Scampi

12 Jumbo shrimp, shelled keeping tails on and de-veined 1 cup olive oil 1/3 cup drive white wine 2 cloves garlic, minced 2 Tbsp. parsley 1 tsp. salt 1/2 tsp. freshly ground black pepper

Rinse shrimp in cool water and dry. Mix olive oil and wine with the rest of the spices. Place shrimp in shallow bowl. Pour marinade over shrimp, cover and chill for 2-3 hours in the refrigerator, turning a few times. Fire up the grill and bring to temperature. Cook shrimp over high heat for 3 minutes a side, brushing frequently with marinade. Serve immediatelty over steaming hot white rice.
Alternate. Preheat the broiler. Place shrimp on a foil-lined broiler pan about 6 inches from the heat. Cook 3 minutes a side basting with left over marinade.
