Spicy Shrimp Scampi A Great Dish for the Holidays! |

2 lbs of Nice large shrimp, cleaned and de-vained 1 small onion 1 small bell pepper 1 clove of garlic 1 tsp. salt 1 tsp. pepper 1 Tbls. butter 1 tsp. parsley 3 cups of rice

Clean and boil shrimp only for about 5 minutes or until pink. While shrimp is boiling, cut the onion and bell pepper up into small dices and cook in a small amount of butter. Add garlic, salt, and pepper. Next put the shrimp into a pan with butter and cook for about 1 minute, until hot. Add all the other ingredients into the shrimp, simmer, and pour onto rice. Add a sprig of parsley on top of each plate for color. This is a nice dish to serve for Christmas Eve, very colorful!
