Tuna Fish Curry Derivation of African Fish Curry |

For Four Helpings: BASIC CURRY & SAUCE: 2 Tins Tuna (in sunflower oil)(or 400g fresh tuna) 1 Tin Tomatoes 10 cardomums 10 cloves 2 Tbs Curry Powder 1 Onion 1 Clove Garlic Creamed Coconut Sprig of Coriander Double Cream ADDITIONAL ITEMS: These are just suggestions, Sliced Bananas Diced Onion & Chopped Fresh Tomatoes Peanuts Cucumber(on its own or in Yoghurt with garlic & Mint {like Raita}) Cubed Pineapple Diced Coconut Hard Boiled Egg(Sliced) Diced Apple

This Dish is easy to cook the preparation of all the side dishes takes a little care.
TO MAKE THE SAUCE:
Fry an onion (Diced) in oil (I use olive oil), add the cloves and cardomum and when the onion is translucent add the tomato and pulp it, add tomato puree & garlic simmer and add the curry powder. Set Aside for approx 1 Hour.
About 15 minutes before serving put the sauce back on the heat and introduce the tuna to the sauce ( fresh tuna cubed to 1 inch squares)
ADDITIONAL ITEMS: This is up to your own taste the curry, once served is garnished with a selection of fruits nuts and vegetables usually served raw at the table allowing people to make their own selection.
