1.5 pounds Sashimi Grade Tuna
Baby Leaf Romaine Lettuce
Crushed Black Pepper
Five Spice Powder
10 Fresh Garlic Cloves Sliced Thinly
Fresh Ginger Sliced Thinly (an equal amount to garlic)
6 Scallion Stalks chopped – do not use bulb
Lemon Zest cut very thinly from 1/3 a Lemon
Orange Zest cut very thinly from 1/3 an orange
Lemon Juice from half a lemon
Orange Juice from half an orange
4 ounces Ponzu Sauce (Citrus Soy Sauce)
Fresh Pickled Ginger
Wasabi Paste

The Dressing: Combine all wet ingredients with 1 teaspoon Five Spice Powder, the garlic, scallions, lemon and orange zest and ginger. Let sit for at least 1 hour.
Tuna: Coat Tuna with crushed black pepper and black sesame seeds. Heat a searing pan with some canola oil to a very hot temperature. Sear tuna on all sides for approximate total
time of 60 seconds. Remove and let stand on separate plate.
Platter: Cover a large serving platter with the baby romaine lettuce. Garnish with the fresh pickled ginger and wasabi paste.
Cut tuna into thin strips by cutting across the grain and lay atop the bed of romaine. Drizzle the dressing to cover entire platter.
Sit back and enjoy. Every mouthful will bring different bursts of wonderful flavours.
