Uncle Charles Bayou Delite Shrimps on Lobster on Steak on Waffles |

10 Lobster Tails 1 Lb. unsalted butter 1 onion, finely chopped 1 bottle ale 1 1/2 Tbls. flour 1/4 cup heavy cream 4 Tbls. cayenne pepper Salt and freshly ground pepper 5 large steaks 20 jumbo shrimp, de-shelled and de-veined Olive oil, for glazing 5 large Belgian-style waffles Purple or Red Juice

Preheat grill.
Remove all the meat from the lobster tails. Set aside.
Melt 10 tablespoons of butter in a small skillet, saute onions for 2 to 3 minutes.
Add lobster meat, shrimps, and 1/2 cup lager, stir quickly to combine over high heat. Drain the mixture, reserving the liquid. Set lobster meat and scallion mixture aside.
Melt remaining butter in another skillet. Add flour and cook slowly without coloring or about 5 minutes.
Add reserved liquid and cream. Cook, stirring constantly until mixture begins to thicken.
Stir lobster meat back into the mixture, add cayenne, and season to taste. Set mixture aside.
Coat steaks with copious amounts of salt, pepper, and cayenne. Slow-grill one side until brown. Flip the steak over and place 2 lobster tails, 4 shrimps, and sauce on top. Grill to completion.
When the steaks are done, place them on top of the Belgian-style waffles. Cover with any extra sauce as desired.
