							| Whitefish Soup In memory of Granny RNE

							| 8oz. cubed whitefish 1/2 cup onion, finely chopped
 1/2 cup potatoes, cubed and steamed
 1/4 cup scallions, finely chopped
 1/2 cup clam juice
 1/2 cup white wine
 2 cups heavy cream
 4 tablespoons olive oil
 2 tablespoons flour
 salt and pepper to taste

							| Heat oil in a saucepan. Add onion and cook for 2 minutes, stirring frequently. Add flour to onion mixture, mixing with whisk until oil absorbs flour. Add clam juice and wine. Beat mixture for 1 minute-dont stop or you will get lumps. Cook for 2 minutes. Add cream and bring to low boil. Add potatoes, scallions, and fish. Bring back to low boil until fish is done.
 Salt and pepper to taste.
