A SPECIAL SPICY SOUP - SAMBAR Sambar - A Favourite Soup of South India |

One of the ingredients, the Drumsticks, used in this preparation is a long green pod. It is also known as Saijan, Marango etc,. It contains carotene, Vitamin C, Protein and Iron. It is used to combat malnutrition among infants and women. Also believed to boost the production of testosterones. Native to southern foot hills of Himalayas, the drumsticks are widely cultivated in South Africa, Sri Lanka, India, Mexico, Malasia and Philippines. --------------
A few pieces each of vegetables like okra, potato,bottle gourd, radish, sweet potato (yam), DRUMSTICK pieces, and brinjal. 150 grams of Refined oil. 200 grams of Red gram. 150 grams of Tamarind. 200 grams of small (sambar) onions. 10 Garlic cloves. 2 spoons of Mustered seeds. 1-2 spoons of brown sugar. 6 lengthwise cut green chillies. 1 spoon of Turmeric powder. 1 small spoon of Asafoetida. 1 fistful curry leaves. 4 whole red chillies. Salt to Taste.
Sambar Ingredients:- 1 spoon- Coriander seeds. 1 spoon- Cumin seeds. 1 spoon- fengreek seeds. 1 cup- raw grated coconut. 5 Cloves. 5 Cardamoms. 2 spoons- corn flour.

Grind all the sambar ingredients into a smooth paste and save. Peel the small onions. Wash the vegetables and set aside. Soak the tamarind in warm water and extract juice. Keep it aside.
Cook the red gram until it is smooth. Add turmeric powder and mix well. Add about 1 1/2 liters of water and continue to boil on medium flame. Now add the vegetable pieces, peeled small onions, brown sugar and the tamarind juice. Add enough salt and continue to cook. When the broth is thickening add the sambar paste and stir well.
Add oil to a frying pan and heat. Add asafoetida. Splutter the mustered seeds. Add red chillies, garlics,green chillies and the curry leaves. saute well and add to the boiling sambar.
SERVE HOT WITH RICE & NON-SWEET ITEMS.
