Bacon and Lentil Soup
A Warm and Hearty Soup!
2 medium-sized carrots
200g lentils
4 rahsers of bacon
1 leek
1 small onion
2 vegetable stock cubes
1-2 cloves garlic
salt and pepper
2 pints boiling water
1 dessert spoon sunflower oil

 

Take the onion and slice it thinly and fry in the sunflower oil in a pot suitable of holding more than two pints of water.

Crush the clove of garlic and add to the onions.

Slice the rashers of bacon into thin strips and then add to the onions.

Allow the onions to go soft and golden, before adding the lentils. The lentils should be allowed to soak up all the flavours of the onions and bacon for a minute, and then the vegetable stock cubes should be added to the two pints of boiling water, and then to the onions, bacon and lentils in the pot.

Bring to the boil and add the evenly sliced carrots. Leave the soup to simmer for half an hour before adding the leeks, then boil for another ten minutes.

Finally stir and season to taste.
