Best Ever French Onion Soup
2 red onions, sliced thin
2 spanish onions, sliced thin
8-10 medium-sized yellow onions, sliced thin
4-5 cups beef broth, either homemade or canned
3-4 Tbls. butter
salt and pepper, to taste,
1 cup port or sherry
1 good crusty loaf of bread, such as dark rye, french stick and cut into rounds that fit oven proof bowls.
1 lb. sliced swiss cheese

 

Saute the onions in the butter, nice and slow, until carmel colored.

Add salt and freshly groung black pepper, to taste.

Add broth and simmer on medium low for 20 minutes.

Add Sherry or Port.

Laddle soup into oven-proof bowls and float a slice of bread in each bowl. Then top with slices of swiss cheese so that they drape over bowls and melt evenly. It also looks good when you bring it to the table.
